The sommelier must evolve. As birds who happen to live by a noisy road develop a stronger tone of voice, a sommelier who happens to serve wine in 2013 must speak up to get back that authority they used to have pre-internet.

"The tutor, Angela Malik, a former accountant, was the first change-of-lifer chef I'd met," she recalls.
