Ethos to offer vegetarian wine list to London diners

A new vegetarian restaurant boasting not only a meat-free menu, but a vegan and vegetarian wine list is to open in London in September.

Ethos is billed as a new 'fast-casual' restaurant open throughout the day and evening offering vegetarian dishes and wines from around the world to either eat in or take away.

Jessica Kruger, who describes herself as "a young entrepreneur passionate about healthy, ethical eating and interesting meat-free food" has developed an eclectic menu featuring: Eritrean cucumber and mango salad; Colombian crema de Aguacata soup; and Lebanese green bean and cherry tomato dish loubieh.

It is currently looking to source a vegetarian wine list and is looking for suitable suppliers.

What to expect inside

It is focusing on a tight wine list initially with four whites (probably Mosac Sauvignon, Chardonnay, Viognier and a Gavi), three reds (probably Merlot, Malbec and Rioja), a couple of rosés, two Proseccos (one pink) and a house Champagne.

Wine will be available in 175ml glasses, 500ml carafes and 75cl bottles.

It will also include a vegetarian friendly cocktail list.

Kruger said: "Ethos was born out of my frustration at the lack of creative and exciting meat-free cuisine available on the high street and the repetitiveness of the dishes offered. I hope the restaurant reflects my passion to offer and share good, deliciously different food with everyone, in a friendly, open and inviting environment."
