Raul Diaz and hospitality industry veteran John Davey launch Hospitality Workshops

Following the success of the launching his own programme WineTraining Ltd earlier this year Raul Diaz has partnered with John Davey to offer a comprehensive service and wine training programme for the on-trade called Hospitality Workshops.

Diaz, who was previously the wine training manager and head sommelier for Jascots Wine Merchants, decided in May 2015 to go it alone and set up his own shop.  Through that process he came to know John Davey, a veteran in the hospitality industry with over 25 years experience.

The two hatched a plan to join forces. "It was great. I can cover the wine training piece and John is able to offer so much knowledge around service given his background. I don't think many other companies can offer what together we are able to comprehensively cover for the on-trade," said Diaz.

For both Davey and Diaz it is as natural expansion as they were already offering the services independently.

"Who else is offering this type of a programme? It is more than just training and we can do it on-site," said Davey.  Davey has been front of house in several iconic and Michelin rated restaurants including being the front of house at Morton's and has worked with some top executive teams at establishments like The Ledbury.

Currently one of the services Davey provides is mystery dining at restaurants and following his experience he can offer feedback that transforms a good experience into a memorable one. "A good experience compared to an exceptional experience is what can turn a first time customer into a long time patron. It is critical to get it right," said Davey.

With the partnership the duo will offer an extensive programme that will be two hours long. Diaz will cover wine training for staff that is catered to the establishment's needs, from basic service training-up or more in-depth training on food and wine pairings or how to get clients to explore new and wonderful wines on the restaurant's list.

Davey will provide insights into how to better anticipate a client's needs before they need to ask or how to make each patron feel looked after and well taken care of. "Paying attention to the finer details like remembering a client's name can be really beneficial. It is the smaller things that matter," explained Davey. It is those insights that can set a restaurant apart and make customers come back again.
