Opening earlier this month, Grain Store is located in a Victorian warehouse in King's Cross and offers an eclectic menu inspired by Loubet's travels around the globe.
The overriding theme at Grain Store is the humble vegetable. Meat and fish can be found on the menu, but vegetables receive equal billing and are served up in innovative guises.
"This is the restaurant I have dreamt of opening for years and the time feels right now," said Loubet.
"I love meat and could not give it up entirely, but the endless opportunities that focusing on vegetables allow me - the colours, flavours and textures - are so exciting."
Starters include seared asparagus, green gaspacho sauce, rosemary and pink peppercorn melba toast (£6.50) and sprouting beans and seeds, with miso aubergine, crispy citrus chicken skin and potato wafer (£6). Mains include vegetable merguez with aromatic vegetables and preserved lemon salad (£6) and sautéed Padrón peppers, almond and black olive oil, and flaked fresh salt cod.
Desserts include white chocolate rice crispy, dark chocolate mousse and almond ice cream (£6) and strawberry and balsamic jam, with horseradish ice cream and nasturtium leaves (£5.50).
Several of the dishes have been matched with cocktails and there is also a 'surprise menu' of five or six courses available (£30-£35).
