Unknown chef wins Michael Nadell Pastry Trophy

Chris Corbishley, who is training to become a pastry chef at Stoke-on-Trent College, has won the Michael Nadell Pastry Trophy, sponsored by Champagne Duval-Leroy.

A shock result, Corbishley's raspberry souffl with Champagne-soaked raspberry and a sugar cylinder beat off a dessert from Marike Van Beurden from Le Cinq in Paris. Van Beurden won the Dessert of the Year competition in Paris last year.

Organised by the Association of Pastry Chefs, competitors in this year's competition, held in London, were required to produce four portions of their dessert in two and a half hours.

Corbishley has won a trip to the Duval-Leroy winery and vineyard in Vertus and a day's work experience with renowned pastry chef Pierre Herm at his kitchens in Paris.
