Master Sommelier Gearoid Devaney is to head up the restaurant division at independent merchants Flint Wines.
Flint owners Jason Haynes and Sam Clarke have focused on private customers over the past four years and now plan to build their existing restaurant business.
Devaney has worked at London's Capital Hotel, Pierre Gagnaire's three Michelin star restaurant in Paris, and most recently he helped create Tom Aikens' wine list from scratch.
He was Restaurant Magazine's Sommelier of the Year 2007 and UK Sommelier of the Year 2008 before becoming a Master Sommelier last year.
Devaney said: "I've been approached by various merchants over the past couple of years but never been tempted. However, the opportunity to join Flint was too good to miss and came at a time when I was looking for a new challenge.
"I've known Jason and Sam professionally for years and I was aware that they had one of the most exciting wine lists in the business - there are simply no weak links."
Clarke, who heads up the private client arm of the business, said: "This is an exciting time for us. Despite the recession and a falling exchange rate Flint Wines has really prospered and we are in a strong position to really kick on and grow the business significantly.
"Gearoid will be a key element in this future growth and we are very excited about the next 12 months"
