With picking finished, Alexandra Martet at Chateau Lavison in Entre-Deux-Mers has now moved into the winery.
We are now very busy pumping over. The odours coming from the alcoholic fermentation are "fresh", the fruit aromas seem almost mouthwatering and very nice.
We have tasted the Merlots and the Francs (both are nearly finished), the colour has really improved and the fruit is very forward. We will almost certainly run-off the first tanks brought in last week and taste again on Thursday.
The weather here is fantastic at the moment (that means there is always that slight regret: we could have left the Cabernets to ripen a little longer).
