Vivek Singh has revealed the names in his new team at the recently-opened modern Indian restaurant Cinnamon Soho.
Executive chef Singh has appointed Ramachandran Raju as head chef. Ramachandran is poised to take the helm of Singh's newest venture, having worked in the kitchens of both The Cinnamon Club in Westminster and Cinnamon Kitchen in the City.
Prior to his involved with Cinnamon, Ramachandran earned his stripes at the Taj Garden Retreat Madurai in India before moving to London for a role at Coromandel in Battersea.
Singh has also confirmed Nicolas Digard will become restaurant manager. Born in France, 35-year-old Digard has worked as chef de rang in Disneyland and at Le Velocipede in Paris; and then at two-Michelin starred The Square in London.
Digard also worked as head waiter at The Cinnamon Club before being promoted to assistant restaurant manager at Cinnamon Kitchen.
Heading up the bar at Cinnamon Soho is Dainius Kazlauskas, appointed as head bartender. Employed as Bartender at Too2much and Hard Rock Casino in London, 28-year-old Kazlauskas worked his way up to head bartender at The Casino at the Empire, Market Place and Crazy Bear.
In 2011, Dainius was taken on as bartender by The Cinnamon Club and was promoted to head bartender at Cinnamon Soho.
