Lyan, set up in the newly opened 100 Shoreditch Hotel, where he continues to evolve his USP of bringing innovative concepts, which aim to “change the conversation”, around sustainable mixology. 

There is also a focus on low-intervention wines. With help from the wine bar upstairs at 100 Shoreditch, a number of natural wines will sit alongside a diverse range of craft beers and cider.
