Billecart Salmon shines bright with Brut Sous Bois

Billecart Salmon is a producer that likes to hide its bright light under a bushel.

But with a bit of persuasion this end it has popped its head out momentarily after "renewing the spirit and savoir-faire of the original Champagnes", and producing a new cuvée,

Champagne Billecart Salmon Brut Sous Bois NV, (rrp £55-60). Composed of a third of each Champenois grape variety it is vinified entirely in oak, the Champagne keeps up with its consistent brand elegance and finesse and offers white and yellow stone fruit flavours complemented by brioche, hints of bacon. The rich toasty sophistication from its oak vinification puts years on it, but purely in a good way of course. Founded in 1818 Billecart-Salmon is situated Mareuil-sur-Ay and is one of the few Champagne houses to remain family owned.
