Premium rum brand Ron Zacapa is partnering with leading young London chef Lee Westcott to create a food-and-drink pairing menu that celebrates slow dining.

The three-course menu will be available for three months at Westcott's acclaimed Bethnal Green restaurant.

Each dish has been created by Westcott to pair with a Ron Zacapa cocktail designed by brand ambassador Dan Dove.

Dove's cocktails use Ron Zacapa's three super-premium variants, Ron Zacapa 23, Ron Zacapa XO, and the newly released Zacapa Limitada.

Zacapa Limitada has been matured in oak casks previously used to store whisky, sherry and Pedro Ximénez before being aged for two years in re-charred barrels at 2,300 metres above sea-level.

The menu concept reflects the slow art of distilling and maturing premium rums.

Dove said: "Ron Zacapa has a rich history of working in collaboration with high-profile chefs in order to create some fantastic flavour combinations.

"Lee Westcott is the perfect partner for The Art of Slow supper club, due to his innovative approach to cooking and use of high quality seasonal ingredients, which match perfectly with the hand-crafted Ron Zacapa cocktails.

"Through the unique dining experience, consumers will be able to experience the wonderful in-depth flavour profiles of all three fantastic variants from the Ron Zacapa family - XO, 23 and Limitada - in a relaxed environment that reflects the brand's heritage and production process."

The menu features three dishes: slow-cured sea trout, kohlrabi, lime and raisin; 72-hour braised beef cheek, fermented grains, smoked bone marrow and turnip; and chocolate, pineapple and rum.

It launches at the Typing Room on May 9. Tickets will be available to purchase at www.biletto.co.uk from April 1.

Ron Zacapa is part of Diageo's Reserve portfolio of premium spirit brands.

It is owned by Rum Creation and Products, a joint venture between Diageo and Industrias Licoreras de Guatemala.

All Zacapa rums are produced using the first pressing of sugar cane juice, rather than molasses.

The brand currently has a 53% market share of the fast-growing super-premium rum category.
