Meaning "dream" in Basque, "Ametsa" with Arzak Instruction opened two months ago in the site of what had arguably once been Europe's leading Thai restaurant - Nahm at The Halkin Hotel. Five employees made the crossover, joined by a full-time representative from Ametsa's triple-Michelin-starred Basque mothership, Arzak. Run by Juan Mari Arzak and daughter Elena, the latter maintained eighth position in Restaurant Magazine's World's 50 Best awards this year.

Zoran Peric of Cellar Trends hosted a tasting of Japanese whiskies from Suntory as part of a series of masterclasses being held at London's Roast restaurant in the eaves of Borough Market. The tasting began with a pretty, tart "Shard Sour" invented by bar manager, Sebastien Guesdon. "Every barman wants to leave behind a legacy which survives them," said Guesdon, dispensing the subtly smoky Suntory Hakushu (pronounced "pronounced ?Hack-shoo") 12 year-old single malt blended with lemon juice, egg white, and cherry, which represents Japan's most celebrated blossom.

The chef and sommelier at the Balmoral Hotel in Edinburgh have won the International Copa Jerez 2007. Sous chef Kevin Sutherland and sommelier James O'Donnell created a food and Sherry menu, beating teams from the US and Spain in the process. Their winning menu included a dish of sauted Keltic scallops, chestnut puree, apples and smoked bacon lardons with Hidalgo La Gitana Manzanilla. The judging panel included award-winning chef Heston Blumenthal, who praised the duo's original and inspiring' dishes.

Chef-and-wine-waiter duo Craig Sandle and James O'Donnell, from the Balmoral Hotel in Edinburgh, won the Copa Jerez on 20 February - the live cook-off and Sherry-pairing contest.
They will now go forward to the Sherry World Cup', or International Copa Jerez, to compete against teams from other key Sherry markets, including the US, Spain and Germany, and to be judged by Spain's top chef, Ferran Adria.
